In the article analyzes the market of bread and bakery products in Ukraine. Determined the main factors reducing this market. Conducted segmentation of bakery products. Presented trend in consumer prices and producer prices for bread and bakery products. Proposed the measures to improve the economic efficiency of bakery production. Also formulated major ways to increase competition in the baking industry.
