The analysis of the main factors generating hotel risks during the exploitation phase: the risk of reducing financial stability, the risk of insolvency. Particular attention is paid to theoretical and practical approaches to the essence of economic risks, their minimization in the hotel and restaurant business. The political situation in the country has a significant impact on the development of hotel and restaurant business in the region, which as a result leads to economic risks, loss of economic benefits and their bankruptcy. Therefore, the leaders of the hotel and restaurant business are facing the problem of minimizing the impact of economic risks on the financial activity of the enterprise, preventing bankruptcy. The theoretical and practical substantiation of methodical approaches to the essence of economic risks, their minimization is one of the prerequisites for the growth of the profit of the subjects of hotel and restaurant business. With the deepening of globalization and global integration processes, modern hotel business, under the influence of external and internal changes, is forced to seek new tools and management methods based on systematic and integrated approaches. Successful functioning and ensuring the continuity of the development of the hotel business is paramount in a market economy, a dynamically uncertain and volatile environment. For any state, it is necessary to have an adequate level of development of the hotel business as it promotes the revival of all socioeconomic contacts and connections, enhances the economic potential of the regions, raises the rating of the state, its individual cities in the world community, is a multiplier of the growth of national income, employment and the development of local infrastructure, is characterized by a high level of efficiency and rapid returnспользуется on investment. Market transformations in Ukraine, accompanied by denationalization of ownership and the emergence of new structural units, should have led to an increase in competition between the subjects of the national economy. Thus, after the collapse of the Soviet Union on the market of hotel services of Ukraine there were private enterprises, and all of them in the process of development of competition began to fight for the consumer. For efficient management of the resource potential of the hotel business, the likelihood of its bankruptcy and liquidity complications, depending on the projected values of the results of the economic and financial strategy of the enterprise and modeling the process of strategic development of the hotel business, taking into account its features.
