Abstract

The article is aimed at studying the peculiarities of managing the performance of a restaurant enterprise under conditions of uncertainty. The article defines the essence of managing the performance of a restaurant enterprise under conditions of uncertainty and examines the current situation of the catering market in Ukraine. Different levels of uncertainty and the methodology for building strategies for each level are distinguished. Restaurant establishments that have managed to survive during crisis situations have been studied. Modern tools for improving performance under conditions of uncertainty, namely process-oriented budgeting, crisis diagnostics, and the methodological apparatus of game theory, were analyzed. Research methods: analysis, comparison, generalization and modeling to study the performance management of a restaurant enterprise under conditions of uncertainty. The tools of process-oriented budgeting, anti-crisis diagnostics and the methodological apparatus of game theory are used to assess and improve performance. The practical significance of this article is to study the current performance management tools with a view to introducing into the activities of restaurant establishments mechanisms for functioning under conditions of uncertainty in today's hospitality market. The study of the specifics of performance management methods under uncertainty can provide restaurant business entrepreneurs with information on a new methodology for attracting consumers, optimizing budgeting, knowledge on crisis diagnostics, the impact of integrating the game theory apparatus into the management system, and emphasize the importance of new performance management tools in the process of drawing up an enterprise strategy. To ensure effective use of the research results, the author proposes innovative performance management methodologies based on the analysis of national and foreign scholars. The article also reveals the terms used in today's restaurant market that allow to spread the new essence of performance management in conditions of uncertainty, namely: outdoor catering, SMM marketing, crowdsourcing, Balanced Scorecard, “dark kitchen”, CRM, ERM and other tools to improve the performance management process. The integration of these tools into the operations of restaurants will have a positive impact on performance management in the face of uncertainty.
